Further to my other post on CMC sub-frame design, my personal car has a Subaru engine.

It is a simple matter at this stage to enlarge the engine bay to fit a 2.0 or 2.5 Suby in the rear. Not sure about a 3.0 as I have never seen one.
The only problem I see is that different bumper brackets would need to be fabricated.

Does anyone here have a rear mounted Suby engine in a CMC?

If so would you recommend that I move the 2x2 engine compartment tubes to gain more clearance?

I have a Subaru 2 liter motor fitted and there is plenty clearance all round except for the turbo. This required cutting a bit into the firewall and then boxing it. The KCC has a trim that is fitted for an aircooled motor that bolts out to seal the motor to the body. I have seen the same conversion into a beetle and it requires a little bit of cutting. Give me shout if you need more info
