I guess some of the answer regarding moving to a 2110 from a 1915 has to do with what you want to do with your engine, how much HP do you want/need, and how many dollars are you willing to spend? I have a 2109/2110 right at the moment and decided to build a 2332 rather than attempt to upgrade the 2109/2110.
I have never had a car with "too much hp" but maybe that has something to do with a boy racer mentality in an old f@rt....I did one time have a heavy car with too much torque however, it broke many things....universals, ring gears, transmissions....yes, in the plural...
But back to the point, if the max you can go stroke wise in your case without clearancing the case is 76mm then that size engine makes sense. If you have to do any clearancing then I would go full boat and move on up to the easy max of 84 mm stroke with 94 mm pistons to give the 2332 cc. Going to 86 mm or 90 mm stroke is not for the casual builder I think. However, going to even 84 mm might mean new pistons and new rods too....but 20% more displacement should give you 20% more HP and if you make good / proper selections on rod lengths and pistons, cam, and compression then you might add 30% torque or HP....
