I've noticed that there are a lot of drivers of 2110cc and 2165cc Type I powered replicas.

The general consensus seems to be that both engines provide satisfying power and still maintain a good measure of reliability.

I'm interested in what the differences in "feel" between the 2 engines are; can anyone give me an idea?

I don't think that displacement alone determines the "feel" of one of these engines. Carb, cam, head work and being properly dialed in is what will determine how the engine performs. All things being equal however, there's no substitute for displacement. Personally, I have come to the conclusion that the 2110 is a great stroker engine, not too big and plenty of potential. It seems to be a very popular size on this forum and I don't think that's an accident.
