I'm certain that this would be a monumental task for many people, but has anybody considered rebodying their speedster with a coupe body or is that just a really stupid undertaking?

I'm sure it could be done. But lots of work. Understandable if you've got a really good drivetrain/suspension.
Anything could be done if you throw enough money towards it but as DannyP says lots of work.
But you're throwing away a $20-30k car that you could actually be driving while doing the swap. Your old body would be worth maybe $5k. I'd think you'd want to start with a new tube frame and go with a Subaru rear engine then plunk the coupe body on it.
So I guess the FL sun has been beating down on you bear head too much? Lane always complained the wind was tossing his heair around - hence the move to a coupe. In the South you'd want a heck of an AC (and big sun roof) in a coupe or you'd bake.
Sun stroke caused the need for a coupe don’t you know.
One problem is the wait time to get anything built by a reliable builder. Not exactly widely available on the resale market and some I've seen, based on the who the maker might be and the very short time/low mileage, make them suspect in my book.
Fellow on here in NC recently got a coupe body delivered (ok delivery was an adventure). You could do the same. We need to get Alan down here to FL for the Winter - and set up Merklin Motors II in my Baker FL Barn!
Are you going to set up a campground so we can all bring our cars for service and projects to be done
Camp ground is a Can Do - inherited 12 acres - with other family members holding the other 48. Great deer and hog hunting too! We have alot of Snow Birds coming down around Thanksgiving thru March.

There are many I think that once they suffer the time frame of the build, then the agony of the sorting especially when they live far away from the builder it makes them just want to bail out.
I mean a DD would be gone in a few months with the sorting required on these cars.
