Before I get laughed out of the newbie's group, I'm not actually interested in putting a full-sized human behind the front seats. I do, however, have a need to have a couple seats and belts back there like my '79 911SC Targa had. It was rare to use those seats, but once in awhile it made the car fit the family 2nd car category for school pickup or trip to the ice cream store. In my Speedster search, I've seen photos with these jump seats and belts (original Porsche?); doubtfully standard by any means. 1) is there room or a flat spot to design and put in a pad and some belts or 2)do any of the replicas actually offer this ridiculous option?
Please help, or I may have to get a mini van.

They can all do it, you just have to specify that you want the back seat area to have a useable seat and seatbelts. (except Specialty Autoworks, because they use this area for the engine)

My IM had them and they worked well for making sure something lite didn't get sucked out of the back. I also had a couple of very small children back there with my seats pulled up so far it made my knees hurt, but like you said, it worked for the small time I needed them.

Many if not most of the originals had this seat, and it is sometimes called the parcel shelf. Somtimes it was removed and they did have other options, but this would actually be the norm. Seatbelts? Not in the beginning, but who cares we almost all have seatbelts installed anyway.
There is a fiberglas deck behind the seats. Some manufacturers put an upholstered seat bottom on it. However, unless the driver is short and the rear passenger is legless, there is no real legroom for rear passengers. Add to the problem is the rounded fiberglas back where you would put the seat backs, the seatbelts would be for cosmetic reasons due to lack of structural mounts and the top frame would need to be removed.

That's COLD Dr... LOL.. Mike, I too have been looking for a Speedster that would incorporate that "Jumper" seat pad you have been hearing about. I asked Kirk at VS and he said it's not a problem to add some seat belts, but don't expect them to hold up well in a head-on! I too have two little ones that would on occasion have to sit "Indian style" to fit.. then clamp on those belts best you can...

Unless someone builds a stretch Speedster Replica I don't think it is doable in any semi-safe, or stylish way short of pedaling like Fred Flintstone and riding around like a four-some of Shriners packed into a Toonville go-cart.

We aren't laughing at you.., but hopefully, with you.
