I'm totally new. I drove Theron's my Speedster home yesterday about 150 miles.

I noticed this morning that the belt popped off last night (after I got home) or early this morning (can't say for sure).

I got a 19mm wrench out and was able to get the belt back on and tighten accordingly.

But it still looks a little wobbly to me. What do you think?

There are about 6 shims on the outside and 4-5 shims on the inside. Should I just remove some of the shims on the inside to raise it up a bit more?

Yup, the one in the video is pretty loose.  When it's properly tightened and when you're pushing the belt inward towards the pedestal of the alternator, you should be able to push (deflect) the belt about 3/4".

A single shim makes a big difference in belt tension, so go one shim at a time until you get it tight enough.  Also, once you get the pulley nut tightened, turn the engine over one full turn (which is two turns on the alternator) to let the belt settle in and then do the push-on-the-belt thing to see how tight it is.

If you continue to get belt flipping problems after you have the proper tension, then switch from the style you have with the internal notches to something like the Continental with the external notches.  We have to run that style on our very high RPM and race motors to prevent flipping (at any tension).  They just seem much less prone to it.

And as mentioned above a few times, once they flip once, just pitch them and get a new one...
