Stan is right that a longer stroke (given the same variables) will produce more torque as the crankshaft has a longer moment arm (force = effort times distance). However, torque is also dependent on volumetric efficiency (cylinder filling with combustible mixture) so the right cam, valves, ports, and ignition timing can also increase torque (through increased brake mean effective pressure, or BMEP).
Longer stroke engines also register higher piston speeds than a same-displacment engine with shorter stroke and larger bore. This is a wear/longevity and temperature issue.
