Do you really want to split the cases to get at that cam? You might be better off buying a custom long block built to your needs. I'd hate to hear your car is apart during prime driving months.....
I purposely did my motor upgrade in the winter just so it would be running this Spring. As it turns out, I'm very happy with my CB Performance experience, including that "sidewinder exhaust" that you recommended. My project took about 3 months including a 7 week lead time for Pat to build the engine.

A lot depends on the type of driving you wish to do.

Spirited driving, around town cruising, general purpose etc.

I've built many performance engines for dunebuggies and street cars and by far, the engine I prefer for street use is a 2110cc with mild porting and a mild cam.
This combination provides a good deal of low end torque and the ability to travel at freeway speeds with no problems. It also provides a good deal of reserve power.

This combination calls for an 82 mm crankshaft with 90.5mm pistons Eagle, and a whole bunch of other make a fine selection of Camshafts all of which depends on where you want the power band. In addition a set of ported and polished 044 heads with some Weber 44IDF carbs and you'll have a reliable and powerful engine.

The thick cylinder walls provide a sturdy surround for the pistons and maximum engine longevity.

Many other engine combinations are available and this combination is just one of my favorites. I'm sure others will disagree or voice their "favorites" and that's OK because it will give you several options.
I absolutely agree with Larry.

Same bore, same stroke, using an Engle 120 cam (TONS of mid-range "grunt" and a red-line above 6,500 - really starts to "breathe" above 4K rpm), chrome-moly rods, Stock Rockers with HD single valve springs, 044 heads mildly ported on both sides. The only difference is I have a pair of 40mm Dells, rather than the 44IDF's and I love 'em. Nothing wrong with the Webers, I just like the Dells, and I like the 40mm throats, too. Personal preference. I progresivly ported the manifold runners to match the heads.
Oh, and I run a CB Magna Spark with Platinum plugs gapped at .052

Last I knew, I was getting 144hp and 166 ft. lbs. of torque.

It's quick, and runs cool, although I'm intentionally running a tad rich all the time.

Larry and Gord are right on the money; that's my favorite displacement; it's a shame I have a 1915 (that's what my car came with) because I'd gone with 90.5 cylinders instead. With regards to carbs, Dells flow more than their equivalent Webers so a set of Dell 40's flow as much as 44 Webers so I guess Gord is set too.

If you asked me (a confirmed "Bergite") I'd say get the parts from Gene Berg but you can't go wrong with CB Performance or the Chicos (did you mean Chico or Chirco?; they get mixed up sometimes). If you need to wait for the Berg stuff because it's back ordered do so; you won't be disappointed. Since you'll be building later you can start ordering now in case you need to wait for some of the parts to get manufactured.
