On that set up, one set of shims (2 degrees or so) won't be enough.

 

Go with a double set to get to 4-5 degrees, or you can make a pair out of some thicker tube stock to get you out to 5-7 degrees.   You may find that 6-7 degrees is your "sweet spot".

 

Bear in mind that if you run more than a single spacer (shim) you'll need a pair of longer bottom bolts for the beam.

Glad you dodged the Arthur bullet.  We've been watching emails from friends in Beaufort, SC and all they got was moderate rain.  

 

I ran about 3.5-4 degrees in mine for over ten years and it was OK.

 

The last time I had it aligned, the kid who did it was a Hot VW Aircooled kid who talked me into running thicker shims and he brought it out to 7 degrees.  More stable at 80 mph and above, but now I'm getting too old to venture up there 

 

You may notice it's a bit harder to turn the steering wheel in a parking lot, but that's all.
