I bought one of those "cup holders" that is spring-attached too the
tunnel and it was just awful.

The best thing I've found is one of those paper mache cup carriers you get at McDonalds. Just place it on the floor and put your cup in it. Start with a cup that you pour 1/3 out of so it won't spill in turns.

Otherwise wait until you have a long stretch of easy driving and just hold onto the damned cup as you drink from it.
OK folks, I have this one solved once and for all. Just go buy an Oxo Liquiseal travel mug. It is the right tool for this job. It is in fact spill proof, and only takes one hand to operate. The stainless steel one is a vacuum thermos sort of thing, and keeps the drink hot or cold for hours. It can (and mine has) roll around on the floor in the fastest of turns, and it will not spill if you have the little button pushed right. It is easy to use, and a little pricy at around $20. They have an all plastic one a little cheaper, same basic deal, but does not preserve the heat as well and works neat as you please. Really.
Someone posted this one earlier. I ordered it and am happy with it. It serves multiple purposes and doesn't get in my way. I do tend to tilt it towards the passenger side to give my right leg a tad more clearance. Also, depending on your passenger, their leg may brush up against it. It has two sizes. The large side nicely holds a large pop bottles. http://www.thesamba.com/vw/classifieds/detail.php?id=668902
