The wide body only refers to the wider flared front and rear fenders - to accommodate wider tires.  The interior (at least on VW pan-based cars) seat width is still limited to about 18" wide.  The center tunnel being so high and the side entry sills are limiting factors for a wider seat.  Some have successfully cut the center tunnel down to be more like the original 356 unibody low center tunnel.  I guess this would allow a slightly wider seat but the side sills are still an issue. Tall folks can also lower the pan section where the seat sits by using a paint tray-like structure.

The first time I saw a Beck Speedster - I was amazed at the flat wide interior floor!  You could fit a Barco lounger in there!  (Beck's are custom tube and not VW Pan based).
