Dash and eyebrow leather replace- how to?

Hi all,

Greetings!
I'm new here, my location is Hong Kong.
Since my brother just bought a 356 speedster replica,
and he wants me to help replace the leather for the whole car.

The first problem I suspected is the dashboard one, since the windshield
is sitting on top of the leather.Have no clue....
So, is there anyone have done this before? please shed some light ?
