I have a chance to buy a set of Gene Berg DCNF 44 Weber carbs. Are they a good carb for a 2110 mild motor? I know that because of their short height they work well in type 2/3s, but what about it an IM? In other words, is it worthwhile to switch my IDF 40s for the DCNF 44s?

DCNF is a good carburetor, and the 44 is better than the 42. They are mis-oriented on a VW engine (floatbowl location) which could be a problem if you run autocross or hillclimbs. Otherwise they're nice carburetors except for the fact that some parts may be difficult to find. many people use them on performance VW engines.

Given a Choice, I would buy a new pair of Weber 48 IDF's for a 2 liter engine.
