I'm about to starting taking the EFI off so I can pull the engine and tranny.  Since the EFI is pressurized, do I need to depressurize the system before I start undoing fuel lines? 

I already have the exhaust system off and the oil drained, so I can't run the engine with the fuel pump turned off.

Unfortunately, you've already eliminated the safest and proper method. If it's been sitting more than a day it could already be depressurized just from leakage. I'd get some goggles, some thick rubber or leather gloves, and wrap a towel around whatever fitting you want to take off first. The spray won't last long. I'd also disconnect the battery and make sure the engine's dead cold first.
