Does anyone know if original CMC kits came with preassembled seats or did the kit builder have to assemble the seats before installing them?

You had to assemble your own seats - apply the foam and then the vinyl.
I remember when my kit came in 1989 - wife laughed when she saw the seat kit. Had to drill and apply tracks, cut plywood for seat base cushion, etc. - the carpet for back of seats weren't even bound on edges. At least the foam was cut to shape. The build manual is available here (for donating members) with detailed instructions.

Yeah, I looked at the seat "kits" and said, 'Screw THAT!' and went out and found a pair of used, 914 seats and popped them in. Git R Dun!
