Pick any one of them, they're all the same. The four lug holes on the VW rotor and the five lugs on the Porsche share the same radius/circumference. One lug hole stays "as is" the next four are drilled and tapped to the five lug Porsche spacing, in between the original four.

Are their any kit car assemblers in your area? Check out Kit car magazine for sources. Make a few calls. Ask who does the work for the assemblers? Any hot rod shop or dune buggy shop probably has a source. Get references. It is a precision job. You'll want to spin balance the wheels and tires after completion to verify the concentricity.
Be sure to price out the machining costs first, the Porsche five lug rotors are pretty cheap brand new.

Maybe buy new and sell your old stock used rotors for a couple of bucks to off set the shipping costs.
