Patrick, My engine compartment came with stainless steel sheet forward of the engine, aluminum sheet on either side, and galvanized tin around the sides and back of the eng tin. The stainless looks good and holds up well but is pricey. the alum is starting to show some wear in the place that my ext filter had been mounted to it. The galvanized tin was cheap and looked like an after thought. That was replaced by a galvanized steel called 'paintlock' as sugested by a metal shop. Seems like it is a 20 or 22 gage thickness vey durable and is held in place with the same type screws that are used for the engines tin.
On the sides and front pieces I have used a sound deadening (peal & stick) material cut into strips and layed into the side and top edges. On the bottom side of the paintloc I have place some heat reflective material to isolate the compartment from the exhaust system. (though some of that has come off and I want to figure out a way to keep it there)
Hope that gives you some direction.
Victor
