I am reassembling a CMC 356 that I didn’t disassemble. The engine compartment latch is on the body, but I have no striker that fits into the latch and I can’t seem to find any info on the internet? Does anyone have info on who might have a striker or photos of what it looks like?

As a supporting member, you could download the CMC build manual that shows how to handle this.
IIRC (it's been 20 years) I used a hex-socket-head 1/4" X 20 bolt with a piece of steel brake tubing over it to get to roughly the same diameter as the jaw opening of the latch (happens to be the same OD as the bolt head). The thought was that if the tubing wore over time it could be easily replaced. Haven't replaced it in 20 years.....
@Perry here are a couple of pics of the latch & striker on my Vintage. Disregard the L-shaped flange (that was for another project).
Below pic, the arrow points to the striker. What some SOCers have done, is simply use a 3/8" (?) bolt, bolted into the position (as in pic) and cut to fit. See Gordon's suggestion above.

You could fabricate a "shelf" out of a piece of aluminum angle that would be attached with the two latch mounting bolts. No welding required.
