Not sure if it is a break in thing or of a something is just to tight..but my gas pedal is very stiff and feels like something is too tight. Not smooth at all. Any thoughts?

If you pull the throttle linkage from the engine compartment does it move smoothly?
Forgive me for this dumb question but pull pull the linkage? Do you mean pull on the cable or push on the hex bar piece that the cable connects to?
Either. It could be as simple as too strong of a return spring.
probaely have a frayed cable better be getting one I take a 2inch long peace of vw brake line and make a nice shorting sleeve I crimp it onto the cable when I cut it to length . The linkage clamp may need to be drilled to ecept the sleeve but its a nice factory look when done.. Also lube your footfeed and check the roller
Todd, check the cable where it goes through the shroud, make sure the tube is through the shroud and nothing is rubbing or binding.
Danny's thoughts match mine.... If you have no tube through the fan shroud, the cable is probably dragging there cutting its way to its desired path.... If it has done this, it has already damaged itself and will need replacement.... This was one of the problems I ran into in my Spyder.... As cheap insurance,, you can line the tube ( a piece of 5/16" or 8mm brake line ) with spiral wrap wire restraint. (Available at Home Depot's electrical Dept. )
There may be a misalignment in the flex tube from the hard tube on the frame and the fire wall area....

I should have joined up with Mark for trip to you. Mark is less than 6 miles from me and we have yet meet up (I'm in Ft Walton Beach and he's in Shalimar). There is another Speedster owner 26 or so miles North in Crestview, FL. Maybe we can have 3 Speedsters show up at this Spring's Bugs on the Bayou (which is different from the normal FL bugs in the swamps). Photo below is from last years - NO Speedsters showed.

I've always wanted to add a grease zerk fitting to the pedal assembly. If greased on assembly probably overkill if you never drive in rain.
Wolfgang, aka Greg, is a real Speedster expert. After all, he's been working on his for, what, 20 years now? Eventually he may even get it on the road.
Anyone ever thought about getting one of these?

I looked at getting one of those a couple of years back when I was having sticky throttle issues. I went to a CSP bell-crank setup instead. Turned out the problem was one sticky carb.
Anyway, I would certainly do the roller thingie if I had a hex-bar setup.
I honestly can't see the need for one of those.
If all you have is a stiff pedal, play around with return spring rates or change the spring entirely until yu get a pedal feel you like.
Or try one like this: Way simpler than most and works very well.
