I believe that most people who buy the kind that can mount over the glass do it that way. Others buy the kind that won't go over the glass and therefor they have no choice.

Mesh style over the glass from 356registry.com are about 300 dollars and I believe the same ones are available from www.nlaparts.com for just a little less and are from the same manufacturer??

The other slotted kind you can buy from many outlets for about 100 dollars, but you can't get the glass in under them. Most people buy the one they like the most.
To use grill and glass, space the bottom mounting point out enough to clear the glass.
The grill doesn't fit perfectly when doing it this way, but it's the only way you can use this type grill when you leave the glass installed.
The top of the grill mounts between the chrome bezel and the glass.

Use caution if you do it this way. I broke 2 glass lenses screwing around with this before I figured out how to get grill installed.
Don't forget to re-adjust your headlights after installing grills.

The rubber gaskets for the headlight are available from most VW parts suppliers. I just ordered a set from www.cip1.com. They were only a couple of dollars.

I used the the stock VW headlight lens. I broke the ones that came on the car when I was trying to "force" the grill AND the glass on at the same time.
I think I bought replacement VW lenses from cip1 or one of those mail order places. There are fluted lenses available. They may look more authentic, but the price is usually double the generic plain glass ones.
