If the shops you are visiting can't work on Dellortos, then I suggest you never go to those shops for anything. If they don't know Dellorto then they don't know Weber, and therefore they don't know anything about the probably hopped-up engine you have.
But don't worry about that, you can easily do a better job keeping your carbs in tune than you can pay someone else to do.

The book covers all the models and sizes of the Dellorto carbs. And, if the VW Shops you were going to were any good they would have copies of the book right there on the shelf for you to purchase. The book will tell you more than just about the carbs, it will tell you a lot about how the engine does what it does to run well.
And, as said above, if you have 2-barrel carbs they are no doubt model DRLA -- and the size (36, 40, 48, etc.) is stamped on the side of the carb. It is stamped on one of the barrels, on the side of the carb that has all those screw adjustments and the fuel hose hook-up (as I recall).
