What are the differences bewtween the high-bow and low-bow tops? Is the HB just for greater head room, and if so, is there any demonstrable differences in wind-resistance, etc. between the two? Which should I choose and why? Also, I have the chance to choose between top material that is lined black inside (tan on the outside) vs. tan both inside and out. Any ideas positive or negative between the two inside colors, or am I just splitting hairs?

I would have thought the high bow tops were for the cabriolet (Roadster) with the higher windshield (and usually with wind up windows) and the low bow for the true speedster with short windshield (and usually side curtains). Even if you have a low bow one fitting a top from another maker often requires adjusting the bows to fit the top. I'd go with the tan Haartz cloth top with the black lining.
Haartz Stayfast canvas looks like the product at the link you listed. Guess I used Haartz cloth generically like Coke or Kleenex -- to mean fabric. It has canvas outer layer with a preshrunk cotton inner layer (which is usually black). It mimics the original German Sonnendeck canvas used on Mercedes, BMW and Porsche. It has a far richer (IMHO) than the pin point or leather look vinyl used on MGs, Mazda Miatas and std on most replicas. Its harder to keep looking new though - near impossible to remove car wax without discoloring it (especially on black ones)!
