Can anyone advise where the horn is fitted? Can’t seem to find a bracket for it - do I have to make one? Whereabouts does it sit? (The actual horn, not the horn press).

Typically they're mounted under the car behind the horn grills either right or left. Not sure if either of the builders are using dual tone horns so there may only be one small round horn disc.
If you mount the horn by the master cylinder you can pick up 12v on the brake light switch.
It's a simple, circular horn. There's no bracket that I can see. I guess I need to make one?
Most such horns that I've seen have a round threaded thing on one side that goes through a large hole on a bracket supplied with them. A large nut (also usually supplied) holds the horn to the bracket. If yours didn't come with a bracket I guess you'll have to find or make one.
Sorry, I confused the issue, It's fitted with a little bracket (with a hole in the end) but I can't see anything on the actual body to fit it to (unless it goes on the sub-frame, which I don't have yet?)

On many Speedsters, there is a vertical panel that forms an inner wheel well wall (say THAT three times, quickly!). That is partially held in place by the front bumper supports, left and right. Most of the horns get mounted either to that panel OR to the lower part of the bumper mount:
