Can I finish a spyder build if I dedicate a 2-car garage to this purpose? The spyder kit I plan to get will be frame and body only. I have to assume this is enough space, but I am not sure.

That should be more than enough room.
Enough room for sure - just took me 28 years with my daily driver sitting outside. YMMV.
I built 2 in a 3 car garage at the same time once before. You have enough room. I suggest a car lift, the scissor type if you plan on doing lots of 1 man jobs. Makes things easier and you can lift up the car to waste level and store stuff under it over night when not working on it.

Excellent info on a good scenario. How high is your garbage can, though ? I built an airplane from scratch in a one car garage...sometimes it depends on how much you want it. C-FDWS.
My garage at the time was a standard ceiling height. The Spyders aren't very tall so you can lift them up easily. My lift was from Direct Lift and was portable. Sold it to Vintage Motor Cars a few years back. I have a retired doctor in a shop near mine building an airplane in a single bay storage unit. lol. He's going on year 3 on that thing and its almost done!
