Can anyone let me know who they use for insurance. Mercury doesn’t insure these types of vehicles.

You'll find insurance through Hagerty, American Modern, or Grundy's. Make sure you ask for an "Agreed Value" policy. And set the limit no less than the price you paid for your Speedster. With an Agreed Value policy your value will never go down. Every year you should assess the current value of used and new cars and make adjustments as necessary. There are limitations with all collector car policies. These limitations will set the number of miles you can drive and where you can drive the car to. Most will tell you that your driving is limited to pleasure drives, car shows, parades, and etc. There will likely be a mileage limitation as well but most companies offer ranges such as; 0-2500, 2501-5000, 5001-7500 or something similar. There may be an option for unlimited mileage but you'll pay a lot more for the policy.
The least chosen option is if you have lots of money and you just want to insure it as whatever model year VW your Speedster was built on. You could drive it however, wherever, and for any number of miles you want but if you suffer a total loss they'll only pay you for the value of whatever year VW your Speedster is registered as. Not a popular option.

Odd that the fuel tank didn't explode. The State Fire Marshal told me a story, years ago, about a guy who burned his house and left some gas in a plastic milk jug on the chair he torched. House burned to the ground but the top of plastic jug melted and sealed over the gas and was found in the rubble.
Wonder what it was? Maybe a 917 model.
Specialty insurance will not take you if you lack a garage. My car is stored in a heated garage in Winter and then left outside for 5 months with an appropriate cover. That is unacceptable for them.
