The more photos and info you provide, the more accurate the estimate of worth will be. Example: how many miles on the installed engine? Is there an odometer? If so, check it. Take interior pics of replica, engine pics of both engines, etc., etc. A potential buyer will want to know your general location also. Good luck!
The 912 engine if complete clean and running is worth probably $4k. With brakes, carb and battery gone over the CMC Speedster should bring $14k. Assume it is titled. With the 912 in the Speedster you are probably looking at same or maybe an extra $1-1.5k. The cost to maintain and rebuild a 356 engine is many times more than a bug for about the same HP - so tends to scare folks off. Now is time to clean it up and get it on the market --- warm weather and sun bring out convertible buyers.

You may be better off to sell the 912 motor separately; I don't think too many people value "historically correct" details with these cars. What does the speedster have for an engine now? Al

I would sell the engine and perhaps convert the cash across to doing a small tidy up etc. on the Speedster.
I am sure you Dad would be pleased to know you are driving it around having fun possibly the reason he left it to you...
