Could this be a sender/sensor not being matched to the 80 psi gauge?

You'll need to get a multi meeter and see what the sender is putting out. Then you'll need to know the specs of the gauge.

I take it you've just hooked it up? changed the sendor? Because yeah, something's not right...
Is this on cold-start, running 20W/50 by chance? If so, let the engine warm up (until the temperature gauge reads "normal"), and see what you've got.
It's entirely possible that your cold-start oil pressure is over 80 psig if you're running heavy oil, you've got a large oil pump, and have no pressure bypass.
As soon as I turn the ignition it shoots to the top and does not move. I had the chassis restored and motor rebuilt and they put a new sender on. Many problems and I can't get the guy to return my messages.
Is it the right sender for the gauge? Try the old sender for comparison. There should be NO teflon tape on threads it has to ground through the engine block.
