I recently ran into a Speedster owner who said he was running dual Picts. It's the first I had heard of using the stock VW carbs in tandem. Is this possible or? He said they are easy to adjust and low maintenence.

Very possible, and cheap.
There are a lot of them out there. Don't think that they were not from an original VW dual carb set up. The carbs are mirror images of each other. You can't go buy two single carbs. You will want the -2 and -3 sets. Also, you'll need the linkage, and when you go from single to dual carb, you need to go to an 009 distributor as the vacuum no longer works. I have a set of german solexs on my second Speedster. It is a 1600 single port. My son and daughter drive it. It'll do 80 all day long and stays cool, even on 100 degree days.
An ideal set up for a 1776 dual port may be a set of dell 36s.

There are also "baby Weber" setups; dual single throat 34mm carbs.
