If you do you own work and can handle the restoration yourself you should be fine at 5-7k. Start the price out at $3,500 as see where it goes. If you got it for say $6,500 you will put another 5,000 into the restoration you have about $11,500 to $12,000 in it when your done. The Kit build cars are not worth as much as say a new Beck, or JPS but done correctly can bring decent money, its all about the finished product

Gotta laugh at the seat bottom cushions.  There has to be $20k worth of 20 dollar bills stuffed in there or they are inflated to 60 vs 20#s!  Hard to tell by pictures as to quality of the paint.  Think Alan pointed out that all seem to be $16k cars when finished to respectable road-worthy condition. So figures what new interior ($1600 at VS) and other fixes would cost and work back from there.  If a paint job is needed (it looks nice in pictures) that could be $2K.  

I had a good laugh at the whoopie cushion seat bottoms as well. I was wondering how many animals lived in them. . Is it just me, or do those carb look like they are sitting on type 3 manifolds? They seem to be sitting really low. Maybe it's just an illusion?

That little car looks like a respectable start.
