Darren, I looked into closing up my tach hole and recutting it because my car came with 914 gauges. The 914 tach was bigger so my reproduction tach was too small. I just fabricated an aluminum ring to make up the difference. As far as the five gauges - I think the earlier 356's (54 & 55) had big speedo and tach and smaller oil, temp, alt gauges. So depending on what you're looking for it may not be worth the trouble? Somewhere out in Calif (someone here will know)can reface your current gauges to look original and for probably less than it would be to replace and fill holes. Although Cory's dash is pretty bad ass!
(Standard disclaimer; I don't owe these guys anything, but they did fix my old '81 928's 85 mph VDO speedo after I broke it. ...)

I did the same thing. It's worth the headache. First pic is the
car in '97 and the second pic is how it looks now. I went with
some 912 VDO's I had sitting around. The odometer gear was busted
so I was able to set the mileage reading to match up to the old
guage while I was in there repairing it.
