I set up my to do that if I find the bumbers with the holes. I found them on ebay in mAss a couple of months ago, but I forgot about them and lost the auction by a couple of bucks. I am running straight dual gas pack, but right now I have them turned and run out the center. If I ever find the bumper with the exhaust out puts again... I am set up for it.

I'll be doing a local club show this weekend with 30+ original Speedsters, Cabs and Coupes.

I can ask about the years of the exhaust through the over-riders and on which models it appeared and report back (these guys go way beyond fanatics - at least one of the Speedsters used to be a near 100 point 356 Registry car http://www.356registry.org/Members/DiCorpo/

I've never seen those over-riders with exhaust outlets on a Speedster. Cabriolets and Coupes, but no Speedsters. Doesn't mean they never happened (Speedster owners added a lot of interesting stuff on their own after leaving the dealer). Also, the earlier versions had the exhaust pipe buried inside of the over-rider bar, which looked cool, but discolored the back of the over-rider with exhaust soot. The later "C" models had a 2" exhaust pipe extension beyond the over-rider, which didn't look as cool, but solved the exhaust soot problem.

Would the exhaust through-put in the aluminum bumper guards we tend to use discolor the aluminum permanently? If not, then you could do it on the cheap -- relatively.
Use a dye-grinder on the old drill, and there you go. As long as the hole looks right, your local exhaust shop ought to be able to bendy-up some pipe, right?
