Would you all be so kind as to provide direction, instructions, video, etc for me to try to replace my rear wheel bearings? My speedster is based on a 1973 bug with IRS rear suspension. I have never done this repair before

Lucky,
The information here from Samba may help you, also be sure to check out Craig's post and blog in the thread.

Also if you check out Samba and do a search for wheel bearings there are a lot of other threads with either the same type or more information, pictures and videos
I think I've seen some examples on youtube too.
I'm on the other coast of Fl. If closer I'd come over and we'd knock it out in less than a day.
Here is a very nice tech page that explains it
do some research, get the parts you think you will need, and dive in; do not be afraid to do it. If get in a pinch, we're here to help. It might not go smoothly, but the job is quite doable. Getting the inner races off the shaft is the hard part. Finding the right section of pipe or the proper socket (I have used both approaches) to use a drift to remove and/or replace might be an issue. If you can get someone who has been there and done that to help, that would be great.
