I'm a litte ashamed to admit, but I used common household door hinges you can get from any hardware store -- made by Stanley. They are like two bucks each, or some equivalent of free. Look at what you bathroom door swings on, that's what you are after. I used two 3-1/2" hinges per door.
However, I did modify them. I hammered the ferruls tighter against the pin (to remove slop) and spot welded the ferruls so they won't open up (and cause slop). I also bent one of the hinge flanges a little (next to the hinge) so it would tuck in a little tighter in the resricted space available.
The hinges are cheap enough to experiment with.
It takes quite a bit of fiddling and probably some fiberglass carving, but the doors can fit and hinge nicely. In my case, I can open my doors almost 90 degrees before the leading edge of the door wants to hit the body. My door stops are adjusted to prevent that from actually happening.
