I HAVE TRIED EVERYTHING I CAN THINK OF NEED HELP.

Calm down, Grasshopper.
Many questions need to be answered first:
Engine size?
Tins in place?
Timing?
Jetting?
Oil temps?
Oil type?
Head temps?
Type of shroud?
Dont no engine size built by berny bergman has duel two barells tin in place, timing on,jetting dont no oil temp 230 shuts down, 10 30
Too high compression, too lean, too far advanced. Bad engine compartment sealing, missing engine thermostat/flaps or aftermarket shroud. Bet you have some chrome on engine.
Worth adding remote oil cooler with thermostatically operated fan to cool oil and increase capacity.
Do you have additional air intake into the engine compartment?
Robert, let's look at one thing at a time. First, do you have the Bergman 911 styled shroud? If you do, where is your external oil cooler mounted?

Just looked at this again; how about taking the time for some punctuation? And you say you've tried everything; describe everything. You're not giving any one much to go on here.
I have an external oil cooler mounted behind the firewall witha fan. I also have a hole behind the engine fan with a four in. flex pipe running to a scoup under the car.
It does have a chrome after market shroud and chrome clinder covers.
I second that!
Robert, I have to agree with Joh and Terry. Your best bet is to find a competent mechanic who is familiar with air cooled engines. I've been trying to find out why my 2276 is overheating for a year or so, and ended up pulling the engine and taking it to a mechanic with a lot of experience working on air cooled VW engines.
1) Does your after-market chrome shroud have the correct "vanes" internally; and 2) is your standard oil cooler in place in the shroud (or in dog house)? Check this oil cooler for debris; and sometimes a very old cooler may become impeded with crud internally.

Even if he is lucky enough to have a competent air cooled specialist I see quick labor bill of $300 plus parts. For that he could swap out all the after market chrome pieces. Chrome does not dissipate heat as well as black pieces plus shroud has VW engineered cooling vanes which aftermarket pieces omit. Even the cylinder tin often omits the directional wedges needed for cooling. If he can do that work himself - OEM used parts are less than $100 and he can check for mouse nests at same time. I don't like J tubes either as they often omit the under engine skids and don't dissipate heat as well as stock heat exchangers.
Is 230 degrees oil temp that hot after a hard run? All the time yes. It might not even be accurately measured. Or are you saying that's after "shut down" - which of course would be higher than when running.
how about posting some pictures of your setup?
it's going to be nearly impossible for us to troubleshoot with this level of detail.
I might be wrong here but I believe Robert knows very little about his car.
As much diagnosing we can do it'll still take a competent novice mechanic to make it work.
Anyone here live close to Robert or, at least, know of a competent mechanic in his area?
Massillon, OH. Right, Robert?
The shroud does not have an internal cooler. I think I will have to take it in and have it checked out. You would think since it was built by Berny Bergman they would have set it up right.
Thanks to everyone for your ideas. I have taken the engine out and had a local vw mech check the timing and the Dellorto carbs, Iv'e heard their is a local guy that's good with old vw engines I'll try him.
If I was looking for someone to build a motor, Bernie Bergmann would be one of 2 or 3 rebuilders I would stay away from, nor would I ever recommend him. This will provide any one thinking of a Bergmann Racing motor some good reading- http://www.thesamba.com/vw/forum/viewtopic.php?t=272463&postdays=0&postorder=asc&highlight=bergmann&start=0
