setting correct rear height

I notice many replicas on a VW chassis sit high in the rear, like an original would look with the engine out. Any one know of a way to adjust the suspension, torsion bars, etc so the rear is lowered some?
Not into the mechanics much...this may be a no-brainer, I don't know.
