There have been several Street Beast Builds done by members of this site. I would read their personal accounts of the issues that they encountered while building the now defunct Street Beast kits. You will be very enlightened! Look under "search" in the forum section of the website. Jerome Smith,and Alan Merklin have both built Street Beast Speedsters with much to say about their experiences. Beware of Street Beast!!
Engine choice is easiest part of that build! The largest you can afford. A T1 Bug 1600cc will push it down the road just fine. A 1915cc T1 is a popular mid engine size. Bigger than that then you might consider a T4 (914/411/72 up VW Bus) engine. If you can put the SB chassis together - any engine is possible! A Subaru 2.2-2.5L engine is becoming a popular choice. And for outlandish performance a MAZDA RX7/8 rotary might be considered.
