Is this on a real 356 with the cable driven tach?  I had a '62 356 and the cable lube dried out giving erratic reading until it broke requiring cable replacement.

Replica Speedsters use an electronic tach driven off a coil wire.  That wire could be loose or the ground on back of tach could be dirty or loose.  If it's an old Chinese repo tach - they aren't noted for longevity or accuracy.

The tachometers we have in most of our cars are cheaper reproductions from China.  Quite frankly, they're not all that good and many suffer from intermittant or inaccurate operation.  Sometimes, as mentioned above, the culprit is a loose or corroded wire either at the distributor or at the tachometer gauge and the problem can be sometimes fixed by removing the wire terminal, cleaning it up with sandpaper and re-connecting.  

On the distributor end, one terminal has one wire and the other terminal has two - clean them all up and replace them - Don't mix them up!

On the gauge end, the wire has a flat, 1/4" push-on terminal on the end.  Pull it straight off, clean the tab end (on the gauge) and return it.  Do that for all of the terminals on the gauge.  Also on the gauge, there should be a brown wire connected that goes off to a chassis ground.  Follow it to the chassis, remove it there, clean the terminal and replace it.  There should also be a red wire connected to the gauge - follow it to the fuse panel or ignition switch and clean the terminal (and the fuse ends) there as well. 

If all THAT doesn't fix it, then you are looking either at buying a new gauge or getting yours rebuilt at North Hollywood Speedometer - both tend to be expensive.  Tom has one removed from his car when he upgraded all three gauges to newer versions.  VIntage Speedsters has them, but thet're still the Chinese reproductions - I would probably go for one I knew was working before.  If it is a relatively recent car and is a Vintage, I might call Kirk Duncan at Vintage and see if he can help.
