That or the silver one look like ones I'd like to own. I've started real conversations with Steve about a build and would love more information from the owners of those 2 cars. I know the SAS build time is long. I have time so I can wait. The cars fit my desires perfectly so I will wait.

Where do you live? The off-white Cabriolet is in SC. The Crème Brule Coupe and a silver Cabriolet are in FL. There are 3 cars in CA. There are 2 in MA/RI. And a few more.
I believe there is one SAS Speedster in WA but it is an earlier model without a lot of the buzzers and whistles. Other than the mid-engine placement, it is not very representative of the Cabriolets that SAS now builds, which are far more refined and much dryer .
I'm strongly leaning towards a very classic look of standard fenders, ivory, glacier white or light ivory, with black or tan and chrome half moon wheels.
You will have plenty of time to consider the details. Each of us that has/has had an SAS 356A replica has our own ideas about wheels and standard/flared sides. You may learn some surprising things about these cars along the way.
looking forward to the journey
Here's mine in "Ivory Creme" taken in Maine last year. Interior is serious "patina" tan but the dash cover and tonneau are both black. Wish they were tan too.
