I personally would go with black. The tan is not the same color as your seats and would most likely clash. Even if it were the same color as your leather, the seats and leather accents should be special and stand out from everything else. The black would compliment your carpet, and contrast nicely with the paint.
As much as I love light-colored tops, especially in warmer climes, I don’t think there’s a top fabric on the market that won’t accumulate black dirt in the cracks and creases eventually and look “old.”
My sister in law has a tan beetle with a tan top and my brother and I worked on it for 4 hours and barely made a dent in the embedded dirt.
I used it as well as a very dilute mold remover, but a mixture of H202, hydroperoxide dilute with water can be used with a light brush to remove mold and remove stains. Be careful to start with a weak concentration, for a short time and rinse well. I used it on my old IM with beige top and it whitened it quite a bit. Careful, that brush could ruin the nap of the Haartz top.
