It seems I'd been through everything to adjust my driver side door latch! I was on my second one, and it still didn't have the bite it needed to prevent me from possibly exiting the car like Mannix.
The door was still unlatching and swinging out if I hit a bump on a right turn!
I decided to go on a hunt for a real VW latch mechanism.

JanBlair, a character whom Hollywood would cast as the proprietor of this place if he weren't already, dug through his stash to find a grubby, but ultimately-perfect latch! Installed it last evening, and now you could throw Orson Welles against my door and he couldn't pop it!
