Hi read something that suggested that it might be possible to get a pan designed for taller drivers. I am not that tall, but I am really long waisted, and if a recessed pan was available, it might save me from some fabrication work. TIA

I don't think there are off the shelf replacement pans with dropped pans available so it has to be custom fabbed up. The original pan gets cut about 10 inches shorter so just a little more welding. There used to be fiberglass pans available which would have been easier to modify.
If your looking at a new car - a tube chassis gives more interior space (look at Beck).
Lowering VW pans or, making a custom floor is fairly easy I've done it a few times. Visualize a paint roller pan, that's the configuration you'll want to do. The stock pan ( in good condition) remains in place to about the shifter location that the taper begins for about 10 " and levels off for the remainder. 2 -1/4" is enough floor drop.
I see you’re in Coronado, CA, you should talk to Greg Leach @VSpyder and see what he could do for you. If you’re building new it’s be easy to fit the car to your proportions. If you already have a car he might be able to modify it for you.
Either way it might be worth the drive to Hawaiian Gardens to see.

@Nadodave @Alan Merklin here is a visual reference to what Alan just described.

Thanks Jim ! That's pretty much it with the exception of the taper needing to be about 10" so that the front seat mounting is higher as is the OEM pan.
Thanks for the advice and the pictures! It does appear it won't be too hard to fab a modified floorplan. I am marrying the back of a super beetle to the front of a standard bug, so a little more welding won't be too big a deal
