I’m in the process of having a Subaru EJ25 powered speedster built and I’m trying to figure out what readings it will be important to monitor with this setup that I’ll need to account for in my gauge selection (I won’t be going with the VDO’s). What do you all recommend? The combination gauge I am looking at has oil pressure, water temperature, fuel, and voltage. Should I be looking at anything else, or anything different? Pardon my unfamiliarity with this stuff.

@VKannan this is what did in my car....the period correct dash gauges along with a multi gauge ie
il water volt under the stereo...with the EJ 25 it will require the sending units for oil pressure and water temp...volt is just a hot wire to a fuse...i had a pro mechanic do my stuff since wiring really isn't my strong suit...."save your dough $$ and hire a pro" words of wisdom from us with experience .... happy motoring 
@VKannan, I have the equivalent combo gauge for my car along with speedo and tach.
My temp is oil instead of water for my air cooled engine.
Since you "won’t be going with the VDO’s", then your choice of what gauges to have is pretty much right on: engine temp, oil pressure, volts and fuel is what you get with a WRX (and some of them don't have oil pressure, just a low pressure light).
That should be your minimum gauge set.
I like an ammeter as opposed to a volt meter, but voltage is a lot easier to wire and is 95% as good.
