I'm looking to "possibly add" wheel adapters to the rear of the speedster. Is there a limit to how thick a wheel adapter should be? I'm think of adding a 1/2 to 1 inch.

If you are talking about spacers to give wider track, there as various opinions. I've used slight ones 7 to 10mm on Caymans and 911's without installing longer studs.

Exactly, Larry. There are spacers, and then there are GOOD spacers.
Properly machined spacers and longer studs/lug-bolts are fine. I have a set of 18mm spacers with longer bolts on the rear of my Cayman due to different offset of aftermarket wheels.
Bolt-pattern wheel adapters? I'm not a fan, you're introducing an extra failure point plus two places for vibration(lack of concentricity).
To specifically answer Richard's question, 1/2" to 1" is no problem with good hardware using the existing bolt pattern.
