wheel offset

I just bought a CMC flared fender body and need to buy wheels. I understand these are set up for 7 front and 8 inch rear rims, but do not know about offset.
This is a new build and I will be buying new undrilled rotors so bolt circle choice is wide open.

Been thinking of 17's with low profile 40/45 tyres to end up with overall OD equal to 15's

Any recommendations?

Robert, I went with a 5" offset on my CMC flair. Check out my photos. There also is a guy in Kansas that sells the rotors with a chevy 4 3/4 bolt pattern. Do a search on the forum . The set of 4 cost $200 which included the shipping. The guys name is Ric Oliver.
I also went with a 17" rim . The rear tire diameter is 25" and the front is 23.9".
