You are most likely to find an "adjustable top link" like this at a tractor supply house like John Deere. Hard to tell what size you are looking for from your photo, but you can find these links in a size suitable for everything from a small lawn tractor with a PTO, to standard farm size tractors. Just make sure to verify the thread size and direction. Some have both ends right-hand thread, some have right-hand and left-hand threads. You can only adjust the length with the link installed with the second type.

i was planning to make my own kafer bar, but after looking at the price of quality joints and my time to fab it up - i bought a bugpack setup. quality and fit is 100%
How is the drive after installing the Kafer setup? I am actually trying to figure out a way to support the rear end more. I saw this post and it peaked my interest.

I am having a door gap issue based on the rear sagging. Trying to think of something clever.
those are solid steel! i went and looked at them too and was shocked how much they weigh.
I have not driven the car with kafer yet.but it really locks everything together back there.
for butt sag - there are some option. do you have any kind of rear support to the frameheads?
kafer setup dosent change the ride, just ties the frame horns to the shock towers at the motor mounts,I made a light weight one for my bug years ago.and plan on one for the 356 too.remember the motor is hung out on a fork and all the torque (witch is twisting) has to be held by that fork.this just supports the fork at the ends & triangleates it to the shock towers. there are many different ones out there,Ill probably buy one for the 356,but who knows I might make another one. and also add a rear motor mount like porsche had(I dont know about the 356 but 912 had one big mount, it was pretty nice.)

A fully adjustable link with heim joints seems like overkill to fix the butt sag problem.

Hmm what are the frame heads? Id like some input on what the options are besides cutting fiberglass and moving it up. I only need a little adjustment but it makes sense if I could somehow triangulate it and tighten things up.
a kafer will not help at all with bum sag.

there is a 'bolt on' way to fix the bum sag.
i believe Alan knows the details (or has them written down), but it involved supporting the fibreglass bum, then drilling out the rivets on the inner fenders. 'pre-load' the fibreglass body (jack it up slightly more), then bolt/rivet new supports (more too).
i opted to fab up solid supports. it made a very noticeable difference in ride quality/rattle as well as the obvious bum sag/piece of mind.

Also what kind of rubber mounts did you use to secure the oil cooler to metal piece?
the only fix I could see would be a properly made frame/chassie. I reckon I will have to wate&see when it get it down hear and appart. I hate to pay this much & have to totaly build a new car, but if thats what it takes to make it safe & right,then that's what it takes.
