There are dozens of companies that make wooden shift knobs for all sorts of cars. Some have adjustable attachments that fit all common shift rod thread patterns/sizes. Just Google shift knobs and you'll find them. I have not found wooden dash knobs, but there are lots of billit aluminum ones: same search as shift knobs. Good hunting!
Try these guys Nick. JC Whitney used to sell wood dash knobs for VW too.

I had a very difficult time finding a shift knob to match my Nardi steering wheel, ending up custom painting/staining/tinting an old walnut knob that I found on The Samba to match, came out terrific and ended up being sort of fun.

If you can't find the knobs at Lowes or Home Depot (which I doubt given the massive collection of draw pull and knobs at those outlets) you might just want to paint the knobs that you have in a wood grain finish to match the wheel. Not as cheezy as it sounds, this was done very often on cars throughout the thirties and forties and is a very acceptable option.

My father taught me to wood grain when I was a pretty young kid and I did quite a few cars back then. If I could do it as a child, you could certainly do it as an adult.

Just a thought, if you have no luck elsewhere.

Luck,

TC

Oppppsss . . . . forgot to mention. If you want VERY genuine looking dash knobs, like the ones that came on the original 356, but don't have the coin to buy them. You can pick up a bunch of knobs that came on the pop-out Ghia rear quarter windows for cheap and re-work those easily to match the original. A smidge of filler, some sanding, prime and paint, and they look spot on. Seriously, you can't tell the difference at five inches and they thread right onto the VW switches.

I can shoot some pics of mine later if anyone wants.
